Bush Camp Cooking

Here at Australian Outfitters, we pride ourselves in serving delicious meals. Even when we are spike camping, we do not skimp on quality or quantity.

Coral tree provides good, hot coals for cooking steaks, porkchops, sausages and vegetables. This meal in this photo is South African Borewors style buffalo sausages served with fire roasted onions and peppers and fresh baked potatoes. The sausages are made from buffalo meat and hog meat harvested by our hunters and processed in camp. Served in a variety of flavors, Borewors, Spicy Italian, Breakfast, Sweet and Savoury, the sausages are handmade in camp.

My goal as a camp manager is to make sure no client ever leaves camp hungry. Meals are made to reflect your eating preferences and portion desires. Meal time is time to relax and socialize. Take and chair and let me treat you to wonderful, campfire inspired delicacies.

Dallas Safari Club

Thank you to Dallas Safari Club for putting on another memorable show. It was another great weekend seeing old friends and hunting buddies, telling tall tales of hunting adventures and meeting new people.

The Dallas Safari Club puts on a great convention every year. I look forward to attending this event and cannot wait to see what they have in store for 2020. Once again, many thanks to the DSC for a great show, see you next year.

Coming Soon…

Every year we at Australian Outfitters by Andrew Mackay try to make an improvement to our already world-class hunting camp. This year we have a few changes we are proud to announce, but they are still under construction. Check back for the great reveal. No matter how far out bush, we make the Australian Outback a comfortable place to relax in the evening. Nothing is better than waking up to the sounds of nature, the roar of the waterfall and all the comforts of home in the middle of the Australian bush. We might be an Outback bush camp, but we strive to provide 5-star amenities. This year is no different and our buffalo camp has some great additions in the making. Looking forward to a wonderful 2018 season.

The Fleet is in Camp

The set up process has begun. In order to make a 5-star camp in the bush, it takes a lot of work. Here at Australian Outfitters by Andrew Mackay we work hard to tame the bush. We have now arrived at camp, town truck, hunting trucks and all. Now the setup work begins. Grass must be cute, tents set up, beds made, laundry done. All the mundane tasks of a hunting camp. More photos will follow, but here is our fleet all parked in the start of our bush taming process. The buffalo are here, so now we must make our world-class, Outback hunting camp. Making Australian hunting dream a reality.

Upcoming Hunts 2018

It was a busy, but productive show season in January and February 2018. From Dallas, to Houston to Vegas and finally Mexico. We met with many old clients and talked about the good old times and their adventures. Our 2018 season is almost fully booked and we look forward to making new memories and creating adventures for our hunters this year. We look forward to the exciting season ahead!

John Cleerman Hunt Report – July 2017

I FOUND A WATER BUFFALO HUNT IN AUSTRALIA. WHY NOT TRY SOMETHING NEW. JULY 1/2017 ANDREW MACKAY OF AUSTRALIAN OUTFITTERS PICKED ME UP IN DARWIN. AFTER AN ALL DAY DRIVE WE GOT TO CAMP AND WOW, TALK ABOUT THE OUTBACK I
FOUND IT. AWESOME TENT! THE WATERFALL IS TO DIE FOR. AFTER A COLD BEER AND A GREAT MEAL WITH WINE, EARLY TO BED. NEXT MORNING ITS OFF TO THE BUSH (AND WAY IN THE BUSH) WE SAW ABOUT 12 BUFFALO, BUT NO SHOOTER. AND THEN ANDREW SAYS GET YOUR GUN AND LETS GO, HE IS NICE.

WELL AFTER BIG CHASE WE COULDN’T GET ON HIM FOR A SHOT. BACK TO THE TRUCK AND MOVE ON. WE PASS UP A FEW MORE, THEN THERE IS ANOTHER NICE ONE. OFF WE GO AGAIN, AS WE GAIN GROUND HE STOPPED I SHOT AND IN THE BUSH HE RAN. OFF WE GO ON THE BLOOD, BUT NOT FOR LONG, 2 MORE SHOTS AND HE IS DOWN. WOW WAS A RUSH AND NICE BUFFALO.

ANDREW WORKED HIS ASS OFF IN THE BRIGHT HOT SUN CUTTING AND CAPPING OUT THE BUFFALO. ANOTHER GREAT MEAL AND TO BED. MORNING CAME WITH EGGS AND TOAST, THEN OFF TO THE RIVER FOR WHAT? FISHING BARRAMUNDI SAYS ANDREW, AND I LOVE TO FISH. ANDREW WINS WITH FIRST FISH.

10 MINUTES AFTER I SET THE HOOK AND LAND A NICE ONE, BACK TO CAMP AND CLEAN FISH. SUN IS SETTING AND THE FISH ARE ON THE GRILL, BEER IN HAND AND JUST WATCHING THE WATERFALL. I AM THINKING IT JUST DON’T GET ANY BETTER !!!!!! FISH WAS TOTALLY AWESOME OR JUST A DAMN GOOD COOK.

ALL IN ALL THIS WAS MORE THAN A HUNT THIS WAS A TRUE ADVENTURE.

Buffalo Safari – Andy – July 2017

These folks made every effort to make sure I had a comfortable and successful hunt. I was hunting the water buffalo and Andrew made sure I saw numerous bulls. He made sure of how the bull would score before we attempted a stalk. I had a very thrilling experience when I shot my bull, one I will always remember. He has a very comfortable tent camp and Lora made sure I was well fed and the shower facilities, etc were very good. I would recommend this outfit for anyone wanting to hunt the Australian buffalo.
